Recipes
Kangaroo with honey
Difficulty : Easy
Cooking time : 30 minutes
Ingredients 4 persons
- 4 kangaroo tournedos
- 1 dl fond
- 2 tablespoons thyme
- 1 tablespoon Crème fraiche
- 1 tablespoon honey
- 1 onion, chopped
- ½ carrot, in small cubes
- ½ leek (white part), in half rings
- rainforest spice rub (special Australian spices)
- olive oil
- Pepper / salt
Preparation
- Mix the herbs with olive oil and rub the kangaroo with it.
- Quickly brown the pieces of meat under grill on both sides and then place them on a baking tray.
- Heat some oil in a saucepan and fry the vegetables in it.
- Add thyme and fry until cooked through.
- Add the stock and reduce.
- Carefully mix the sauce with the hand blender and strain.
- Add honey, cook through and turn heat off the gas.
- Add the creme fraiche and stir, do not let it boil.
- Slide meat into the oven and bake until pink.
- Preheat plates.
- Place the meat in the middle of the plate, sprinkle again with the Australian herbs.
- Pour the sauce around the meat.
