Recipes
Jungle Rabbit
Difficulty : Reasonably easy
Cooking time : approximately 2 hours
Ingredients for 1 rabbit (or chicken)
- 1 rabbit (or chicken)
- 6 tbsp yoghurt
- the juice of 1 lemon
- 2.5 cm grated gingerroot
- 3 cloves of garlic, peeled and grated
- 1 tsp cumin powder
- 1 tsp salt
- ¼ tsp (each) garam masala, turmeric and cayenne pepper
Preparation
1. Mix 6 tbsp yogurt, the juice of 1 lemon, 2.5cm grated ginger root, 3 cloves garlic, peeled and grated, 1 tsp cumin powder and 1 tsp salt and ¼ tsp (of each) garam masala, turmeric and cayenne pepper.
2. Spoon the mixture over the pieces of rabbit and leave to marinate for at least 1 hour, and a whole night for a really spicy effect!
3. Thread the pieces onto wooden skewers (which you have first soaked in water) and grill until crisp and cooked through. Serve the grilled meat on a bed of rice.
